Farro Congee

Serves 8

Ingredients:

Farro:

8 tsp garlic

8 tsp shallot

8 oz guanciale

1 lb cherry tomatoes, cut in half

24 oz cooked farro

8 tsp butter

8 oz kale pesto

24 oz chicken stock

8 oz micro greens

8 soy cured egg yolks

Soy cured egg yolks:

1 cup soy sauce

8 egg yolks

Directions:

Soy cured egg yolks: Separate eggs reserving yolks. Submerge yolks in soy sauce for 2 to 3 hours, refrigerated.

Farro: Sauté garlic, shallot, guanciale. Add farro, sauté.

Add chicken stock, butter, tomatoes, sauté.

Top with pesto, micro Greens and a soy cured egg yolk. Enjoy!
