Spatchcock Game Hen & Savory Porridge

Serves 4


4 game hen (.5 lbs each)

32 oz Savory Porridge

4 oz Pepper marmalade

8 oz poultry/porcini rub


Savory Porridge

8 tbsp Garlic, chopped

8 tbsp Shallot, minced

8 tsp Chili flake

2 cup Fennel, brunoise

12 cups Oats

6 qts Chicken Stock

16 tbsp Unsalted butter

8 tbsp Fresh thyme

8 tsp Rosemary

8 tsp Sage

8 tsp Chives

12 tbsp Salt

Poultry Rub

6 cups Wild Mushroom blend, roasted


Savory Porridge: Sauté fennel, garlic, shallot and chili flake in a medium sauce pot over medium heat until shallots are translucent. Add oats and toast slightly in pot with veggies. Add chicken stock and bring to a rapid boil. Reduce heat and simmer 1-2 minutes.

Remove from heat, add salt, poultry rub, butter, and herbs. Stir in butter until completely incorporated. Fold in roasted mushroom blend.

Hen: Remove spine from the game hen, rub down with porcini/poultry rub, and presson grill until cooked.

Heat up 1 cup of savory porridge. Top hen with chimichurri and finish it for 3 minutes in the oven.

Place porridge in a bowl, place hen on porridge, garnish with pepper marmalade. Enjoy!
